If you don't like the "fish taste" in a fish, or prefer eating scallops,
then Dories (walleye pickerels) are the fish to eat! They have no "fish
taste" and they are white, tender and juicy, with the same texture than
that of scallops.

During her one month stay in Montreal, my sister, Joséphine, created a
fantastic recipe for that fish. Here it is:

Barbecued "Walleye Shish Kabob" in Teriyaki sauce

    Ingredients for the sauce:

    1-            Soya sauce                2 tablespoons
    2-            Teriyaki sauce            2 tablespoons
    3-            Liquid honey              1 tablespoon
    4-            Wok Sauce                 1 tablespoon
    5-            Cajun Hot fish spices   1 tablespoon
    6-            Worcestershire sauce   1/2 teaspoon
    7-            Salt, pepper  (to taste, as soya sauce is salty, and all the
                   other sauces are rather sweet and sour)

    Mix all above ingredients well.

    Fish:

    2 lb of walleye filets, cut in cubes for skewing
    Sweet red, green and yellow peppers, cut for skewing too
    Small whole onions, cut in half

    Mix together the fish cubes, peppers and onions. Lay the fish cubes in a deep plate, and cover with the mixture sauce. Keep in the fridge
    overnight.

    Time for barbecue!

    We used wood skewers, and alternated fish, pepper, onion, and so on. Make sure they are well pressed against each other, bearing in mind the fish cubes reducing in size while cooking. Color variation of the peppers will give it an appetizing look too.

    NEVER overcook any fish. While on the barbecue, coat the kabobs with what's left of the marinating sauce
